Minted grapefruit and honey marinade

1 | cup | Fresh grapefruit juice |
3 | tablespoons | Vodka; optional |
1 | tablespoon | Honey |
3 | tablespoons | Chopped fresh mint |
1 | tablespoon | Grated grapefruit zest |
2 | teaspoons | Grated fresh ginger |
1 | teaspoon | Ground coriander seed |
1 | JalapeƱo pepper; seeded and minced |
Directions
Good with skinless, boneless chicken breasts or turkey breast cutlets, and excellent with swordfish and shrimp.
In a small bowl, whisk together the grapefruit juice, vodka and honey. Stir in the remaining ingredients. Place the poultry or fish in a shallow ceramic or glass dish, and add marinade. Turn to coat. Use immediately, or cover and refrigerate, turning occasionally for 1 to 2 hours. Makes about 1¼ cups.
