Mushroom salad (hungarian style)

Ingredients

Quantity Ingredient
2 pounds Firm fresh mushrooms
1 each Onion, diced
1 tablespoon Vinegar
1 cup Bell peppers, diced
2 eaches Cloves of garlic, minced
¾ cup Sour cream or plain yogurt salt & pepper (to taste)
1 tablespoon Parsley, finely diced
1 tablespoon Lemon juice
1 teaspoon Paprika

Clean and trim the mushrooms, blanch for 1-2 minutes in boiling salted water. Drain mushrooms and set aside. Mix the onion, garlic, green pepper, lemon juice and vinegar. Season to taste with salt & pepper.

Blend in the sour cream and stir until smooth. Add in the mushrooms.

Note: if the mushrooms are large half or quarter them. Stir until the mushrooms are well coated with the dressing. Sprinkle with parsley and paprika when serving.
