Mushroom salad (hungarian style)

2 | pounds | Firm fresh mushrooms |
1 | each | Onion, diced |
1 | tablespoon | Vinegar |
1 | cup | Bell peppers, diced |
2 | eaches | Cloves of garlic, minced |
¾ | cup | Sour cream or plain yogurt salt & pepper (to taste) |
1 | tablespoon | Parsley, finely diced |
1 | tablespoon | Lemon juice |
1 | teaspoon | Paprika |

Clean and trim the mushrooms, blanch for 1-2 minutes in boiling salted water. Drain mushrooms and set aside. Mix the onion, garlic, green pepper, lemon juice and vinegar. Season to taste with salt & pepper.
Blend in the sour cream and stir until smooth. Add in the mushrooms.
Note: if the mushrooms are large half or quarter them. Stir until the mushrooms are well coated with the dressing. Sprinkle with parsley and paprika when serving.
