2½ | pounds | Red potatoes; sliced |
3 | tablespoons | Chopped fresh thyme |
1 | tablespoon | Minced garlic |
1½ | cup | Chicken broth |
Directions
Melt butter with olive oil in large heavy skillet. Add potatoes, thyme and garlic. Sprinkle with salt and pepper. Add broth and bring to a boil.
Reduce heat, cover and simmer until tender, stirring occasionally. Add more broth, if necessary. Yield: 6 servings.
