Oat and brown sugar crumb topping

Ingredients

Quantity Ingredient
1 cup Unbleached or whole wheat
Flour
¾ cup Rolled oats (not instant)
cup Packed light brown sugar
1 teaspoon Ground cinnamon
Pinch of salt
½ cup (1 stick) cold, unsalted
Butter cut into 1/4 in.

Directions

Mix the flour, oats, brown sugar, cinnamon and salt in a large bowl.

Add the butted and rub into the dry ingredients until you have a uniform, dampish crumbs. If it seems overly clumpy, rub in a tbs. or two of more flour. Store whatever you aren't using right away in a sealed plastic bag in the freezer. Makes about 2½ cups.
