Oklahoma chicken loaf

Ingredients

4 | cups | Cooked; diced chicken |
1 | cup | Rice; cooked |
¼ | cup | Pimento; diced |
1 | tablespoon | Grated onion |
2 | cups | Soft bread crumbs |
1 | cup | Milk |
2 | cups | Rich chicken broth |
4 | Eggs | |
1 | teaspoon | Salt |
¼ | teaspoon | Pepper |
Directions
Combine ingredients & place in a 2-quart baking dish. Bake at 325 until firm, about 1 hour. Cut into squares & serve with giblet gravy. (May be made with turkey, but add more broth.) BETTY JO DIAL
