Onions stuffed with sweet potatoes

Ingredients

Quantity Ingredient
6 larges Onions, yellow, peeled
1 cup Sweet potato, pureed
½ teaspoon Nutmeg
Salt to taste
Pepper to taste
2 tablespoons Butter
2 tablespoons Honey

Directions

Preheat oven to 350°. Peel onions and boil in salted water to cover for 15-20 minutes or until onions are tender but not falling apart. Keep a close eye on them. Cool slightly and take out centers. Save for a soup. Mix sweet potato puree with remaining ingredients. Stuff centers of onions with potato. Put onions in baking dish with a quarter inch of water in bottom.

Bake onions for 30 minutes.
