Oregon dungeness crab au gratin

2 pounds Oregon Dungeness Crab Meat
2 cans Artichoke heart quarters; very well drained

1 4 ounces jar diced red pimientos
12 ounces Parmesan cheese* grated; (reserve 3

8 ounces Sharp cheddar cheese; grated
1 large Onion; thinly sliced
cup Mayonnaise
¼ cup Parsley; chopped
1 medium Lemon; zest and juice
2 teaspoons Tabasco sauce

Directions

*Asiago cheese may be substituted Preheat oven to 400 degrees. Thoroughly drain crab meat, artichokes and pimientos. Combine and mix all ingredients. Place mixture in ovenproof serving dish. Sprinkle reserved 3 tablespoons cheese to coat the top. Bake in center of oven for 20 to 25 minutes or until top is slightly browned.

Makes 12 to 16 servings as an appetizer; 6 to 8 as an entree.
