Orzo & smoked turkey salad

Ingredients

1 cup Orzo pasta
6 ounces Smoked turkey breast -- cut
In 1/4\" cubes
½ cup Green onions -- thinly
Sliced
¼ cup Red cabbage -- finely
Shredded
¼ cup Fresh cilantro, chopped and
Loosely packed
3 tablespoons Lemon juice
2 tablespoons Regular or lowfat
Mayonnaise
2 teaspoons Olive oil

Directions

Cook the orzo according to the package directions, but without adding the salt. Drain, then rinse with cold water and drain again.

In a large bowl, combine the orzo, turkey, onions, cabbage and cilantro. In a small bowl, stir together the lemon juice, mayonnaise and oil. Add to the orzo mixture and toss until well coated. Recipe By : MRSBOWLER
