Smoked turkey and rice salad

1 | cup | Rice, cooked and cooled |
½ | cup | Low fat yogurt |
¼ | cup | Mayonnaise |
1½ | teaspoon | Dried tarragon |
1 | teaspoon | Dijon mustard |
½ | teaspoon | Pepper |
½ | teaspoon | Sugar |
Salt to taste | ||
2 | eaches | Thick slices smoked deli turkey breast, cut into strips |
1 | cup | Frozen peas, thawed |
1 | small | Tomato, chopped |
1 | small | Sweet yellow pepper, chopped and seeded |
4 | eaches | Green onions |
Directions
PREP TIME: 10 MINUTES
COOK TIME: 20 MINUTES
In small bowl, whisk together the mayonnaise, yogurt, tarragon, pepper salt, mustard and sugar. In salad bowl, toss together the rice, turkey, peas, tomato, peppers and onions.
