Orzo and smoked turkey salad

6 | ounces | Smoked turkey breast -- cut |

½ | cup | Green onions -- thinly |

¼ | cup | Red cabbage -- finely |

¼ | cup | Fresh cilantro, chopped and |
Loosely packed | ||
3 | tablespoons | Lemon juice |
2 | tablespoons | Regular or lowfat |
Mayonnaise | ||
2 | teaspoons | Olive oil |
Directions
Cook the orzo according to the package directions, but without adding the salt. Drain, then rinse with cold water and drain again.
In a large bowl, combine the orzo, turkey, onions, cabbage and cilantro. In a small bowl, stir together the lemon juice, mayonnaise and oil. Add to the orzo mixture and toss until well coated. Recipe By : MRSBOWLER
