Pan-fried salmon with deep-fried rocket

Oil for deep-frying
150 grams Salmon fillet
1 tablespoon Sunflower oil
Knob of butter
50 grams Rocket leaves
Salt and freshly ground black pepper

Directions

1 Heat the oil for deep-frying. Season the salmon fillet. Heat a frying pan, melt the butter and add the oil.

2 Fry the salmon for two minutes on each side or until just cooked through.

Deep-fry the rocket for 1-2 minutes until crisp.

3 Drain well on kitchen paper. Serve the salmon on a bed of the rocket.
