Persimmon pecan pie

Ingredients

Quantity Ingredient
3 Eggs slightly beaten
1 cup Persimmon pulp
1 cup Sugar
½ teaspoon Cinnamon
¼ teaspoon Salt
½ cup Dark corn syrup
1 teaspoon Vanilla
1 cup Chopped pecans
1 Unbaked pie shell

Directions

In a mixing bowl, combine eggs, pulp, sugar, cinnamon, salt, syrup and vanilla. Mix well. Pour in pie shell, top with pecans. Bake in the oven at 350 degrees for about 40 minutes or until a knife comes out clean when inserted in the center of the pie. Chill and serve with whipped cream. Randy Rigg
