Pomegranate-onion marmalade - country living

Ingredients

2 tablespoons Olive oil
2 pounds Sweet Spanish onions, sliced
½ teaspoon Salt
¼ teaspoon Ground white pepper
¾ cup White wine
½ cup Honey
¼ cup Red-wine vinegar
2 tablespoons Grenadine syrup
¼ cup Pomegranate seeds

Directions

1. In large skillet, heat oil. Add onions, salt, and pepper; cook, covered, 10 minutes, stirring occasionally.

2. Stir white wine honey, vinegar, and grenadine syrup into, onions; cook, uncovered, over low heat until onions are tender and all liquid evaporates-about 45 minutes, stirring occasionally.

3. Remove onion mixture from heat; stir in pomegranate seeds. Spoon relish into jars. Seal; store in the refrigerator.
