Red-simmered pork strips

Ingredients

2 | pounds | Lean pork |
1 | cup | Soy sauce |
½ | cup | Water |
Directions
1. Cut pork in slices 2 inches thick, then in strips 6 inches long and 2 inches wide.
2. Place in a heavy pan with soy sauce and water. Bring to a boil, then simmer, covered, 1 hour. Serve hot or cold.
VARIATIONS: In step 2, add any or all of the following: 1 Piece dried tangerine peel (soaked) 2 cloves star anise 1 scallion stalk cut in 1-inch sections ½ stick cinnamon 1 slice ginger root 1 teaspoon salt 1 or 2 garlic cloves, crushed 1 tablespoon sugar ½ cup sherry
