Rice with snow peas and red pepper

Ingredients

Quantity Ingredient
2 cups Chicken stock
2 tablespoons Soya sauce
teaspoon Minced ginger root (or 1/2 tsp. ground ginger)
1 clove Garlic, minced
1 cup Long-grain white rice
2 cups Snow peas, cut into 1 inch diagonal pieces-about 8 oz.
Half red bell pepper, diced
3 Green onions, chopped
1 teaspoon Toasted sesame oil (opt)

Directions

In a medium saucepan, combine stock, soya sauce, ginger and garlic; bring to a boil. Stir in rice; reduce heat to low, cover and simmer for 20 minutes or until rice is just tender.

Add snow peas, red pepper and green onions. Cook, covered, for 5 minutes more or until vegetables are tender-crisp. Stir in sesame oil, if using.
