Salmon salad with yogurt-sesame dressing

1⅓ | cup | Bean sprouts |
1 | tablespoon | Fresh cilantro; chopped |
⅓ | cup | Fresh mint leaves; chopped |
⅓ | cup | Or fresh parsley |
4 | Tomatoes | |
4 | Leaf lettuce leaves | |
1⅓ | tablespoon | Sesame seeds; toasted* |
2⅔ | tablespoon | Yogurt |
1⅓ | tablespoon | Mayonnaise |
3 | teaspoons | Sesame oil |
3 | teaspoons | Lemon juice |
Directions
YOGURT SESAME DRESSING
*Toast sesame seeds in small skillet over high heat, stirring for 2 minutes or until golden.
Combine salmon, green onion, celery, bean sprouts, cilantro and mint or parsley. In small bowl, combine yogurt, mayonnaise, sesame oil and lemon juice; pour over salmon mixture and mix lightly.
Quarter tomatoes, cutting almost through; place on lettuce; lined plates; spoon salmon mixture in center. Sprinkle with sesame seeds.
