Salmon salad with yogurt-sesame dressing

Ingredients

10 ounces Canned pink salmon; drained
1⅓ Green onion; chopped
1⅓ Celery stalk; diced
1⅓ cup Bean sprouts
1 tablespoon Fresh cilantro; chopped
cup Fresh mint leaves; chopped
cup Or fresh parsley
4 Tomatoes
4 Leaf lettuce leaves
1⅓ tablespoon Sesame seeds; toasted*
2⅔ tablespoon Yogurt
1⅓ tablespoon Mayonnaise
3 teaspoons Sesame oil
3 teaspoons Lemon juice

Directions

YOGURT SESAME DRESSING

*Toast sesame seeds in small skillet over high heat, stirring for 2 minutes or until golden.

Combine salmon, green onion, celery, bean sprouts, cilantro and mint or parsley. In small bowl, combine yogurt, mayonnaise, sesame oil and lemon juice; pour over salmon mixture and mix lightly.

Quarter tomatoes, cutting almost through; place on lettuce; lined plates; spoon salmon mixture in center. Sprinkle with sesame seeds.
