Directions

In a shallow baking dish, soak the fish in milk for about 10 minutes. In a heavy saute pan heat the olive oil over medium-high heat until it is hot but not smoking. Remove the fish from the milk and dredge it in the seasoned flour. Saute the fish for 2 to 3 minutes on each side, or until it just flakes. Serve immediately. This recipe yields 4 servings.
