Saskatchewan red-eye salad

Ingredients

12 | ounces | Beer |
⅓ | cup | Onion - chopped |
⅓ | cup | Celery leaves - chopped (optional) |
2½ | teaspoon | Sugar |
1 | teaspoon | Lemon juice |
½ | teaspoon | Salt |
1 | each | Bay leaf |
2 | eaches | Env unflavoured gelatin |
¼ | cup | Water |
Directions
1. Combine tomato juice (reserve ¼ cup), beer, onion, celery leaves, sugar, lemon juice, slat, and bay leaf in a sauce pan. Simmer, uncovered, 10 minutes.
2. Meanwhile, sprinkle gelatin over cold water and reserved tomato juice in a large bowl. Let stand to soften.
3. Strain hot tomato juice mixture into bowl; stir until gelatin is completely disolved.
4. Pour into a lightly oiled 1 quart mold. Chill until firm. Unmold onto crisp salad greens. Makes 8 servings.
