Sherbanu's carrot and cauliflower relish

Ingredients

Quantity Ingredient
175 grams Cauliflower florets; (6oz)
3 Carrots; sliced
1 teaspoon Vegetable oil
½ teaspoon Ground turmeric
1 teaspoon Chilli powder
1 teaspoon Sugar
4 tablespoons Tarragon vinegar
1 teaspoon Mustard seeds

Directions

689 Blanch the cauliflower and carrots in boiling water for 1 minute.

Refresh in cold water.

Combine all the remaining ingredients and leave to stand for about 1 hour, allowing the cauliflower and carrots to absorb the various flavours.

Serve cooled, but not chilled, as this would kill the flavour.
