Shrimp in cheddar sauce

Ingredients

2 tablespoons Plus (see next line) reduced calorie margarine
¼ cup Finely chopped onions
½ cup Finely chopped celery
3 tablespoons Flour
2 cups Skim milk
2 teaspoons Sherry extract
1 tablespoon Lemon juice
4 ounces Lowfat cheddar cheese,shredd
8 ounces Cooked, cleaned shrimp

Directions

Melt margarine in a saucepan. Add onions and celery and cook until tender, about 5 minutes, adding water if necessary, to prevent drying. Reduce heat to low, stir in flour. Gradually stir in milk.

Add sherry extract and lemon juice. Stir until blended. Add cheese and shrimp. Cover and cook 15 minutes, stirring occasionally.

Per serving: 22g protein, 9g fat, 18g carb., 373mg sodium, 121mg chol., 239 calories.
