Skillet beef and rice

1 | tablespoon | Salad oil |
1 | medium | Onion; chopped |
1 | medium | Green pepper; chopped, optional |
1 | pounds | Extra-lean ground beef |
1 | cup | Enriched regular long-grain rice |
1 | can | Kidney beans; (16 oz.) |
1 | can | Tomatoes; (16 oz.) |
1 | teaspoon | Salt |
Directions
In large skillet over medium heat, in hot oil, cook onion and pepper, 5 minutes or until tender.
Add ground beef and cook until browned, stirring occasionally.
Stir in remaining ingredients; heat to boiling.
Reduce heat to low; cover and simmer 25 minutes or until rice is tender, stirring occasionally.
