Snap beans and fresh herbs

Ingredients

Quantity Ingredient
1 pounds Fresh yellow/green beans
2 Scallions; finely chopped
2 tablespoons Fresh mixed herbs: sage, tarragon, thyme, marjoram or basil
2 tablespoons Olive oil
2 teaspoons Dijon mustard
½ Lemon
Salt and pepper to taste

Directions

Trim beans and cut into 2" pieces. Steam them with a little water in a covered saucepan about 5 min until cooked but still a little crisp.

Drain and toss with the seasonings. Serve hot or cold as a salad.
