Herbed green beans and tomatoes

1 | tablespoon | Snipped fresh oregano |
¼ | cup | Olive oil |
1 | tablespoon | Snipped fresh parsley |
2 | cups | Sliced Roma tomatoes |
Salt and pepper; to taste | ||
2 | Cloves garlic; minced | |
¼ | cup | Fresh Parmesan cheese |
¼ | cup | Snipped fresh basil |
Directions
Cook beans in boiling salted water until crisp tender, about 8 minutes.
Drain. In a large skillet, heat olive oil. Add beans and toss to coat. Add the tomatoes, garlic and herbs. Saute one minute. Reduce heat to low and cook 5 minutes more. Season with salt and pepper. Sprinkle with cheese. Can be served hot or chilled. Yield: 4 servings.
