Stir-fry turkey with noodles

1 | small | Onion; chopped finely |
1 | 250 gram pac stir-fry turkey breast strips; (8oz) | |
125 | grams | Mange tout; (4oz) |
1 | Red pepper; de-seeded and | |
; sliced finely | ||
150 | grams | Pak choi; (Chinese cabbage) or |
; spinach, chopped | ||
; (5oz) | ||
200 | grams | Bean sprouts; (7oz) |
2 | tablespoons | Light soy sauce |
1 | teaspoon | Chilli sauce |

Directions
Cook the noodles according to the instructions on the packet.
Meanwhile, heat the oil in a wok or large frying pan until sizzling.
Add the onion and cook for 2 minutes.
Add the turkey and stir fry for 2-3 minutes.
Add the mange tout, pepper and pak choi or spinach and cook for 2 minutes.
Stir in the bean sprouts and soy and chilli sauces and toss together well.
Cook for 1-2 minutes. Adjust the seasoning to taste.
Drain the noodles and spoon into serving bowls. Arrange the stir fry on top and serve immediately.
