Stir-fry turkey with noodles

Ingredients

250 grams Egg noodles; (8oz)
2 tablespoons Olive or sunflower oil
1 small Onion; chopped finely
1 250 gram pac stir-fry turkey breast strips; (8oz)
125 grams Mange tout; (4oz)
1 Red pepper; de-seeded and
; sliced finely
150 grams Pak choi; (Chinese cabbage) or
; spinach, chopped
; (5oz)
200 grams Bean sprouts; (7oz)
2 tablespoons Light soy sauce
1 teaspoon Chilli sauce
Salt and pepper

Directions

Cook the noodles according to the instructions on the packet.

Meanwhile, heat the oil in a wok or large frying pan until sizzling.

Add the onion and cook for 2 minutes.

Add the turkey and stir fry for 2-3 minutes.

Add the mange tout, pepper and pak choi or spinach and cook for 2 minutes.

Stir in the bean sprouts and soy and chilli sauces and toss together well.

Cook for 1-2 minutes. Adjust the seasoning to taste.

Drain the noodles and spoon into serving bowls. Arrange the stir fry on top and serve immediately.
