Sweet potatoes with oatmeal topping

Ingredients

Quantity Ingredient
3 larges Sweet potatos
Stick butter; softened
3 tablespoons Firmly packed brown sugar
3 tablespoons Orange juice
3 tablespoons Pineapple-orange marmalade
2 teaspoons Finely grated fresh gingerroot
1 teaspoon Salt
Topping:
½ cup Rolled oats
½ cup Firmly packed brown sugar
¼ cup Flour
½ teaspoon Cinnamon
¼ cup Butter

Directions

Prick potatoes and microwave on high until soft. Scoop flesh into large bowl and mash with butter, sugar, juice, marmalade, gingerroot and salt.

Spread mixture evenly in 2-qt. baking dish sprayed with non-stick spray.

Preheat oven to 400F

Using pastry cutter, combine topping ingredients until mixture resembles coarse meal. Sprinkle topping over potato mixture and bake in middle of oven until topping is lightly browned, about 25 minutes.
