The heights cafe creole cabbage

Ingredients

1 | large | Head cabbage, washed, cored and sliced |
4 | slices | Bacon, diced |
1 | medium | Onion, sliced |
1 | Clove Garlic, minced | |
1 | 16-oz can chopped tomatoes | |
1 | 6-oz can tomato juice | |
2 | ounces | Louisiana Hot Sauce |
1 | cup | Beef Consomme |
Cajun Seasoning - Tony's or | ||
Prudhomme's | ||
½ | cup | Sugar |
Directions
In a 4-quart saucepan, saute bacon, onion, and garlic until onion is limp. Add tomatoes, juice, and Louisiana Hot Sauce; simmer 15 minutes.
Add cabbage, consomme and Cajun seasoning (start with 1 teaspoon, then season to taste). Cover and let simmer 1 hour, adding sugar after 45 minutes. Stir occasionally to prevent sticking.
