Tofu curry cream

Serve this creamy spread from Vegetarian teacher Eta Brand as a dip for fruit or vegetable platters or as a dressing for baked potatoes.

INGREDIENTS:

8 oz Tofu, silken or firm

2 tb Canola Oil

⅓ c Lemon Juice

¼ c Honey

½ ts Dried Ginger

½ ts Salt

1 tb Curry Powder

DIRECTIONS:

In food processor, crumble tofu and blend with oil and lemon juice.

Add honey and spices. Blend until creamy yellow. If using firm tofu, add a little water for a creamier consistency. Makes 1½ cups.
