Tofu with hoisin sauce

1½ | teaspoon | Vegetable oil |
1 | teaspoon | Minced pared gingerroot |
1 | small | Garlic clove, minced |
2 | tablespoons | Dry sherry |
1 | teaspoon | Hoisin sauce |
1 | teaspoon | Reduced sodium soy sauce |
½ | teaspoon | Chinese sesame oil |
½ | pounds | Firm-style tofu, cut into cubes |
½ | cup | Sliced scallions, green portion only |
Directions
In 1 qt microwaveable casserole combine pepper, celery, oil, gingerroot and grlic and stir to coat. Microwave on HIGH for 2 minutes, stirring once halfway through cooking. Add sherry, hoisin sauce, soy sauce, and sesame oil and stir to combine; microwave on HIGH for 1 minute. Add tofu and microwave on HIGH for 1 minute; sprinkle with scallions. 2 servings.
