Tomato and garlic sandwich with basil - country cooking

2 | Cloves garlic, chopped | |
1 | small | Club roll or baguette, cut diagonally in quarters |
1 | Ripe plum tomato, sliced into quarters | |
4 | Fresh basil sprigs | |
4 | Carrot mums (opt.) |
Directions
1. In large skillet, heat oil over medium heat. Add garlic and saute until tender-1 minute; remove ¼ t garlic and set aside.
2. Add bread to skillet and cook until lightly toasted. On serving platter, place bread quarters. Top each with a tomato slice and basil sprig, then sprinkle with reserved garlic. Garnish with carrot mums, if desired.
