Tomato and garlic sandwich with basil - country cooking

Ingredients

Quantity Ingredient
1 tablespoon Olive oil
2 Cloves garlic, chopped
1 small Club roll or baguette, cut diagonally in quarters
1 Ripe plum tomato, sliced into quarters
4 Fresh basil sprigs
4 Carrot mums (opt.)

Directions

1. In large skillet, heat oil over medium heat. Add garlic and saute until tender-1 minute; remove ¼ t garlic and set aside.

2. Add bread to skillet and cook until lightly toasted. On serving platter, place bread quarters. Top each with a tomato slice and basil sprig, then sprinkle with reserved garlic. Garnish with carrot mums, if desired.
