Two-minute smoked salmon spread

Ingredients

Quantity Ingredient
¾ pounds Smoked salmon chopped, divided
cup Plain yogurt
1 pinch White pepper
¼ teaspoon Sweet or hot paprika (optional)
½ tablespoon Extra-virgin olive oil
2 teaspoons Grated lemon zest
2 tablespoons Fresh lemon juice
2 tablespoons Green onion (white & green parts), chopped separately

Directions

In bowl of food processor fitted with metal blade, combine half of salmon with remaining ingredients except green onion. Process to smooth puree.

Stir in remaining salmon and the white part of the green onion.

Transfer to serving dish, cover with plastic wrap and chill 30 minutes.

Sprinkle with green part of onion before serving. Makes 1½ cups.
