Two-minute smoked salmon spread

Ingredients

¾ | pounds | Smoked salmon chopped, divided |
⅓ | cup | Plain yogurt |
1 | pinch | White pepper |
¼ | teaspoon | Sweet or hot paprika (optional) |
½ | tablespoon | Extra-virgin olive oil |
2 | teaspoons | Grated lemon zest |
2 | tablespoons | Fresh lemon juice |
2 | tablespoons | Green onion (white & green parts), chopped separately |
Directions
In bowl of food processor fitted with metal blade, combine half of salmon with remaining ingredients except green onion. Process to smooth puree.
Stir in remaining salmon and the white part of the green onion.
Transfer to serving dish, cover with plastic wrap and chill 30 minutes.
Sprinkle with green part of onion before serving. Makes 1½ cups.
