Baja beef casserole

Ingredients

1 | pounds | Ground Beef; (chicken or turkey) |
12 | ounces | (1 jar) chunky salsa; |
1 | cup | Sweet corn; |
¾ | cup | Mayonnaise; (low-fat/cal) |
1 | tablespoon | Chili powder; |
2 | cups | Crushed tortilla chips; divided |
2 | cups | (8-oz) jack cheese; (low-fat/cal) |
Directions
Heat oven to 350 F. Brown meat and drain. Stir in salsa, corn, mayonnaise and chili powder. Layer ½ mixture, chips, and cheese in 2 quart casserole. Repeat layers. Bake 20 minutes or until thoroughly heated. Top with shredded lettuce and chopped tomato if desired. Serves 6.
