Baja beef casserole

Ingredients

Quantity Ingredient
1 pounds Ground Beef; (chicken or turkey)
12 ounces (1 jar) chunky salsa;
1 cup Sweet corn;
¾ cup Mayonnaise; (low-fat/cal)
1 tablespoon Chili powder;
2 cups Crushed tortilla chips; divided
2 cups (8-oz) jack cheese; (low-fat/cal)

Directions

Heat oven to 350 F. Brown meat and drain. Stir in salsa, corn, mayonnaise and chili powder. Layer ½ mixture, chips, and cheese in 2 quart casserole. Repeat layers. Bake 20 minutes or until thoroughly heated. Top with shredded lettuce and chopped tomato if desired. Serves 6.
