Banana orange oatmeal

2 cups Orange juice
1 Banana, chopped
1 teaspoon Grated orange rind (opt.)
Pinch salt
1⅓ cup Quick-cooking rolled oats
Pinch grated nutmeg

Directions

In saucepan, bring orange juice, banana, orange rind (if using) and salt to boil; gradually stir in rolled oats. Cook, stirring, for 1 minute; remove from heat.

Stir in nutmeg; cover and let stand for 5 minutes. Makes 4 servings.

Variation: Cinnamon Apple Oatmeal: Substitute 3 cups apple juice for orange juice, rind and banana. Substitute ¼ tsp. cinnamon for nutmeg. Serve sprinkled with raisins, if desired. Typed in MMFormat by cjhartlin@... Source: Canadian Living's Best Light Cooking
