Barley water (18th century recipe)

3 | ounces | Pearl Barley |
2 | pints | Boiling Water |
Grated rind and juice of 1 lemon | ||
6 | tablespoons | Caster Sugar |
Directions
Rinse the pearl barley, put into a jug and pour in the boiling water.
Add the lemon rind and lemon juice and sugar and stir thoroughly.
Leave to cool then strain into a clean jug or bottle before serving.
This drink will keep for up to 5 days in the fridge, but do cover it as barley water easily picks up other flavours.
