Directions
In separate skillets or on the grill, fry 2 cups hash brown potatoes and 4 oz sausage. Scramble together. Add 2 Tbs each of finely chopped onions and bell peppers. Stir and turn until done. Shape potato mixture like an omelet and sprinkle grated cheddar cheese on top.
Allow cheese to melt then turn out on two platters and add freshly chopped tomatoes on top. Makes 2 servings.
