Blueberry ginger dressing

Ingredients

Quantity Ingredient
½ cup Picked-over blueberries
3 tablespoons Water
1 tablespoon Vegetable oil
2 teaspoons Fresh lemon juice
¾ teaspoon Minced peeled fresh gingerroot
½ teaspoon Sugar
¼ teaspoon Freshly ground black pepper
teaspoon Salt

Directions

In a blender puree ingredients until smooth. Serve dressing immediately.

(Dressing will separate if made ahead.) Yield: ⅔ cup
