Bronzed catfish from lhj

Ingredients

Quantity Ingredient
4 Catfish fillets; (6 oz. each)
¼ cup Butter or margarine; melted
4 teaspoons Magic seasoning blends seafood magic; or
1 teaspoon Salt; and
1 teaspoon Onion powder; and
1 teaspoon Ground red pepper; and
1 teaspoon Basil
½ teaspoon Garlic powder; and
½ teaspoon Thyme
Lemon wedges
Hushpuppies; see recipe

Directions

1. Brush both sides of fish with butter, then coat both sides with seasonings.

2. Heat 10-inch cast-iron skillet over medium-high heat until smoking, 3 to 5 minutes. Add 2 fillets and cook until just opaque at center, about 2 minutes per side. Keep warm in oven and repeat with remaining fillets.

Serve with lemon wedges and Hushpuppies.
