Ingredients

4 | Catfish fillets; (6 oz. each) | |
¼ | cup | Butter or margarine; melted |
4 | teaspoons | Magic seasoning blends seafood magic; or |
1 | teaspoon | Salt; and |
1 | teaspoon | Onion powder; and |
1 | teaspoon | Ground red pepper; and |
1 | teaspoon | Basil |
½ | teaspoon | Garlic powder; and |
½ | teaspoon | Thyme |
Lemon wedges | ||
Hushpuppies; see recipe |
Directions
1. Brush both sides of fish with butter, then coat both sides with seasonings.
2. Heat 10-inch cast-iron skillet over medium-high heat until smoking, 3 to 5 minutes. Add 2 fillets and cook until just opaque at center, about 2 minutes per side. Keep warm in oven and repeat with remaining fillets.
Serve with lemon wedges and Hushpuppies.
