Carrot slaw with cashews

Ingredients

Quantity Ingredient
3 cups Carrots, shredded
1 quart Boiling water
½ each Serrano chili, seeded & minced
2 tablespoons Lime juice
½ tablespoon Maple syrup
2 tablespoons Cashew pieces, toasted
1 tablespoon Cilantro, chopped

Directions

Place carrots in a colander. Pour boiling water over them, drain well. Combine chili, lime juice & maple syrup in a bowl & whisk with a fork. Add carrots, cashews & cilantro & toss to mix. Serve at room temperature or chilled.
