Casbah couscous pudding

Ingredients

4 | Egg Yolks | |
2 | teaspoons | Vanilla Extract |
3 | tablespoons | Sugar; Or Honey |
1 | Orange Rind; Grated | |
½ | teaspoon | Salt |
1 | quart | Milk |
⅓ | cup | Couscous |
Cinnamon; For Garnish |
Directions
Combine egg yolks, vanilla, sugar, orange rind and salt in a small bowl. In a medium saucepan combine milk and couscous and heat just to boiling.
Remove from burner. Add egg mixture and return to burner. Heat to a boil while stirring until thick and creamy. Let stand 5 minutes. Pour into dessert bowls. Sprinkle with cinnamon and cool.
