Citrus-marinated turkey breast - sl 11/94

Ingredients

6 pounds To 7 pound turkey breast
1 cup Orange juice
¼ cup Lime juice
¼ cup Olive oil
3 tablespoons Apple cider vinegar
2 teaspoons Salt
1 teaspoon Pepper
2 teaspoons Dried oregano
Garnishes: fresh sage, oregano, & rosemary sprigs

Directions

Remove and discard skin and breast bones from turkey. Place breast halves in a jumbo, heavy-duty zip-top plastic bag; set aside.

Combine orange juice and next 6 ingredients in a jar; close tightly, and shake vigorously. Set ½ cup marinade aside. Pour remainder over turkey; seal bag. Chill 8 hours, turning bag occasionally.

Remove turkey from marinade; discard marinade.

Cook turkey, covered with grill lid, over hot coals (400 degrees F to 500 degrees F) 18 minutes on each side or until meat thermometer registers 170 degrees F, brushing occasionally with [the ½ cup] marinade. Let stand 10 minutes before slicing. Yield: 8 servings.

Note: to cook turkey in oven, place on a rack in a roasting pan; bake at 325F for 1 hour and 10 minutes or until a meat thermometer registers 170F, brushing occasionally with reserved marinade.
