Polynesian turkey salad - sl 11/87

Ingredients

Quantity Ingredient
4 cups Cooked turkey or chicken; diced
1 cup Red Delicious apple; unpeeled and diced
1 cup Pecans; chopped
15¼ ounce Can pineapple tidbits; drained
1 cup Mayonnaise
2 teaspoons Lemon juice
½ teaspoon Curry powder
11 ounces Can mandarin oranges; drained
Lettuce leaves

Directions

Combine first 4 ingredients in a large bowl; mix well. Combine mayonnaise, lemon juice, and curry powder; stir into turkey mixture.

Add mandarin oranges, and gently toss. Cover and chill. Serve on lettuce leaves. Yield: 6 to 8 servings.
