Country ham and corn

Ingredients

2 cups Cubed booked ham
½ cup Chopped green onions
½ cup Margarine or butter; melted
3 Eggs; well beaten
15 ounces Can cream style corn
11 ounces Can Green Giant Mexicorn
1 pack Corn muffin mix (7 oz)
4 ounces Chredded cheddar cheese; (1
Cup)

Directions

Heat oven to 350 degrees. Grease 2 qt baking dish. In large bowl, combine all ingredients except cheese. Pour into greased baking dish. Bake at 350 degrees fo 45 -55 minutes or until golden brown and set. Sprinkle with cheese. Bake an additional 1-2 minutes to melt cheese. Let stand five minutes - before serving -- cut into squares.

For less fat, use fat free cheese, low fat margarine and egg beaters.
