1 | cup | Onion (up to) |
½ | cup | Corn meal (the more you put in the thicker it gets) |
Salt/tamari to taste |

This gets the two thumbs up from me because I generally don't like soup. I think I had 2 bowls of this, though...plus it's easy to make!
Saute onion and corn in a few tspns of water, adding more if it gets dry.
Add cornmeal, stirring to avoid lumps, and so all veggies are covered.
Slowly add water and stir to once again avoid lumps. Bring to a boil, then simmer for 40 min. Add salt/tamari at end.
