Creamy chipped beef

Ingredients

4 tablespoons Butter or margarine
4 ounces Dried beef -- torn into pieces
2 tablespoons Onion -- finely chopped
3 tablespoons Flour
cup Milk
1 cup Sour cream
2 tablespoons Parsley -- finely chopped
4 English muffins -- split

Directions

Melt the butter in a skillet over medium heat. Add the beef and onion and saute until the onion is soft, 5 to 10 minutes. Add the flour, stir for 1 minute, and then gradually add the milk. Cook, stirring, until the sauce is smooth and thick, 5 to 10 minutes more.

Stir in sour cream and parsley and cook until heated through, 1 minute. Serve on toasted english muffin halves.
