Crusty baked potato pancakes

2 | larges | Or 4 medium potatoes |
3 | Eggs | |
¾ | cup | Flour |
½ | teaspoon | Salt |
2 | cups | Milk |
¼ | pounds | Salt pork or bacon |
Directions
Peel and grate the potatoes on medium grater. Add the eggs, flour, salt and milk. Beat thoroughly until well mixed. Dice salt pork or bacon and fry until crisped and browned, in an iron frying pan. Leave fat in the pan, remove salt pork or bacon. Add the batter, spread in the pan. Scatter fried salt pork or bacon on top. Bake in 350 degree F oven for 30 to 35 minutes.
NOTES : Try it first for a Sunday brunch with ham and eggs, or serve with whipped butter, maple syrup or warm applesauce.
