El cocodrilo's cranberry citrus salsa

2 | cups | Cranberries (fresh or frozen) |
1 | cup | Chopped yellow or red onions |
½ | cup | Fresh orange juice |
The zest from 1 orange | ||
1 | Jalapeno chile, seeded and chopped | |
½ | teaspoon | Ginger |
2 | tablespoons | + 2 tsp. brown sugar |
1 | teaspoon | Honey |
1½ | tablespoon | Rice wine vinegar |
1 | tablespoon | Tabasco sauce |
2 | tablespoons | Chopped cilantro |
Directions
Combine all ingredients in a saucepan. Bring the mixture to a boil, then remove it from the heat and let it cool while stirring carefully ~ - try not to split the cranberries!
