Garbanzo and carrot salad

Ingredients

Quantity Ingredient
15 ounces Garbanzo beans, Eden organic drained
1 medium Carrot; cut into matchstick pieces
¼ cup Cilantro or parsley; finely chopped
2 tablespoons Sesame seeds; lightly toasted
1 Garlic clove; pressed
2 Onions, green; finely chopped
2 tablespoons Tahini, mixed with 1 T water
1 teaspoon Vinegar, ume plum, Eden

Directions

Mix beans, carrot, cilantro, sesame seeds, garlic and green onions.

Stir tahini mixture and vinegar together and pour over ingredients.

Serve on a bed of lettuce.
