Georgia stewed catfish

12 | smalls | To medium catfish |
1¾ | cup | Hot water; divided |
¼ | cup | All-purpose flour |
2 | cups | Milk |

Directions
Melt butter or margarine in a roasting pan over medium heat. Salt the catfish and arrange them so they lie flat in the pan. Add ¾ cup hot water, place pan in oven, and bake at 425ø until fish are done and lightly browned. Remove from oven and continue cooking on top burner of range. Add 1 cup water and bring to the boiling point. Make a paste of flour and milk; add to water in fish pan to make gravy. Add salt and pepper. Yield: 6 servings.
