My friend Ginny Miller in Tacoma has become a sort of cooking chum through the years. I first met her because she is married to my doctor. She has given me several recipes and I usually have the nerve to print them for you.
While on tour with my last cookbook, the one on cooking with wine, I told a reporter, "I put wine in everything but waffles." Ginny heard about this remark and called me. "You clown, why don't you put wine in waffles?" said she with her usual tact and charm. She offered me the following recipe. It is delicious.
Add a few tablespoons of Cointreau or orange liqueur to the basic waffle batter. Serve the waffles with whipped cream into which you have grated orange peel. Such a breakfast. And this is my doctor's wife! From <The Frugal Gourmet Cooks American>. Downloaded from Glen's MM Recipe Archive, .
