Guacamole con tomatillos

2 cups

Ingredients

Quantity Ingredient
4 TO 5 fresh or canned
Tomatillos
3 Canned green chilies, seeded
*OR*
1 Serrano or jalapeno pepper
¼ cup Cilantro leaves, minced
IF hotter sauce is wanted
2 larges Ripe avocados
1 tablespoon Minced onion
dash Salt to taste
dash Pepper to taste

Directions

OPTIONAL GARNISH

If using fresh tomatillos, discard husks and wash. Boil in a small amount of water until just tender, about 5 minutes, drain.

If using one of the hotter fresh chilies, discard stem and seeds.

Combine tomatillos and chilies in a blender and blend until smooth.

Halve the avocado and remove seed. Scoop out pulp and mash with a fork. Stir in tomatillo mixture with onions. Add salt and pepper to taste. Garnish with cilantro if desired.
