Jamon serrano with melon

Ingredients

1 | fresh, ripe melon | |
12 | thin slices of jamon serrano | |
1 | carrot, grated | |
juice of 1 lemon | ||
1 | scallion, finely chopped | |
8 | tablespoons | olive oil |
6 | tablespoons | of sherry vinegar |
salt & fresh ground pepper |
Directions
Cut melon in half, scoop into balls with a teaspoon or melon baller.
Mix in bowl with oil, lemon juice, vinegar and salt and pepper.
Add the carrot and scallion, mix thoroughly and chill for 2 hours.
Shape ham slices into cones and serve with melon.
An elegant appetizer or party dish.
